Beef Quesadilla

I really need to standardize some kind of header before I write too many recipes.

  1. Heat 2 tsp oil in a large frying pan on medium high.
  2. Cook pepper, half the onion, and garlic, tossing for 2-3 mins, until softened.
  3. Add mince, breaking up with the back of a wooden spoon. Cook for 3-4 mins, until browned.
  4. Stir in paprika, cumin, coriander, and oregano. Cook for 1 min, until fragrant.
  5. Transfer beef mixture to a bowl and wipe out the pan.
  6. Add another tsp oil to the pan on medium heat. Add 1 tortilla, top with some of the mince and the cheese.
  7. Fold over tortilla to enclose and cook for 1-2 mins each side until dark golden brown and cheese is melted.
  8. Repeat with remaining tortillas and mixture.
  9. For the pico de gallo, combine tomato, chilli, onion, and lime juice in a small bowl. Season with salt.
  10. Serve tortillas cut into wedges with pico de gallo salsa and lime wedges.
