Beef Quesadilla

I really need to standardize some kind of header before I write too many recipes.
Ingredients
- 1 tablespoon extra virgin olive oil
- 1/2 red pepper, diced
- 1/2 white onion, finely diced
- 2 cloves garlic, finely grated
- 200g beef mince
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon dried oregano
- grated cheeze of your choice!
- Flour tortillas
- 1 roma tomato, diced
- 1 jalapeno chilli, finely diced
- Lime juice
Instructions
- Heat 2 tsp oil in a large frying pan on medium high.
- Cook pepper, half the onion, and garlic, tossing for 2-3 mins, until softened.
- Add mince, breaking up with the back of a wooden spoon. Cook for 3-4 mins, until browned.
- Stir in paprika, cumin, coriander, and oregano. Cook for 1 min, until fragrant.
- Transfer beef mixture to a bowl and wipe out the pan.
- Add another tsp oil to the pan on medium heat. Add 1 tortilla, top with some of the mince and the cheese.
- Fold over tortilla to enclose and cook for 1-2 mins each side until dark golden brown and cheese is melted.
- Repeat with remaining tortillas and mixture.
- For the pico de gallo, combine tomato, chilli, onion, and lime juice in a small bowl. Season with salt.
- Serve tortillas cut into wedges with pico de gallo salsa and lime wedges.
Molly's Notes & Review
- This meal only dirties one pot (well actually, frying pan)
- The cleanup after this meal is a little intense though
- Instead of "juice of lime" as called for in the original recipe, I just use lime juice from a bottle
